Learn to make artisan bread at home without the need for commercial yeast or maintaining a sourdough starter. Rosemary Mark shares her Yeast Water Method using a "no need to feed" bread starter that turns out loaves, rolls, pizza and focaccia with great flavor, improved digestibility, and a longer shelf life than breads made with dried yeast.
Each student will make a jar of yeast water, then practice mixing, shaping and baking artisanal rolls and loaves in class. Rosemary will share her knowledge for choosing flours, best practices for baking and storage, and how to convert sourdough recipes to incorporate this low-fuss natural yeast.
A light lunch featuring our class-made rolls will be served along with selected wines and non-alcoholic beverages. Each student will take home their very own jar of yeast water and a bread dough to bake off the following day, along with the knowledge to continue the baking adventures at home.

ROSEMARY MARK remembers the day her kindergarten teacher said, “Rosemary, today you need to play somewhere other than the kitchen or the grocery store”. But she didn’t know where else to play! After studying Home Economics and Food Science at Cal Poly San Luis Obispo, Rosemary became a consultant to food companies, creating new recipes and food product concepts. She has worked in the test kitchens and R&D facilities of Golden Grain, Kikkoman, Del Monte, Basic American Foods, Safeway, and for brands including Sun-Maid, Dreyer’s, Mann’s and others.
